Parsley

Flat or curly, this vitamin-rich herb is worth the slow start from seed.

Parsley

Parsley comes in flat-leaf and curly-leaf varieties. Both are biennial, though in Cindy's zone it only comes back about half the time, so it is often treated as an annual.

How to grow it

  • Slow to germinate from seed — up to 3 weeks — so soak seeds a day or two first if starting your own.
  • Needs a sunny, well-draining spot to produce well.

How to use & eat it

  • Rich in Vitamins A, K, and C; just 2 tablespoons provides more than the daily recommended Vitamin K.
  • Dries well on a towel or in a dehydrator for winter use.
