Plantain
The low-growing "weed" that hitchhiked across the continent and became a first-aid staple.
Plantain is a low-growing perennial "weed" found almost anywhere disturbed ground exists. It was historically nicknamed "white man's foot" because its seeds hitchhiked on settlers' boots and spread wherever people went.
How to grow it
- Grows in compacted soil, lawns, paths, and garden edges.
- Young leaves are most tender; older leaves get tough and bitter later in the season.
How to use & eat it
- Young leaves are edible in salads or cooked greens.
- Traditionally used as a "spit poultice" — chewed leaves applied to insect bites — for soothing, antiseptic properties.
- The seeds are psyllium, the same fiber used in products like Metamucil.
