A cousin of rosemary and thyme with an intense but mellow flavour — the bean soup herb.

Savory (Summer Savory)

Summer savory is related to rosemary and thyme, with an intense flavour that is milder than winter savory. It rarely survives an Edmonton winter, so it is usually rebought each spring.

How to grow it

  • Give it a sunny spot with well-drained soil.
  • Low maintenance once established.

How to use & eat it

  • Classic in poultry stuffing and hearty bean soups.
  • Savory White Bean Soup: 1 lb white beans, 12 cups stock, 2 bay leaves, 1/4 cup olive oil, 2 cloves minced garlic, 2 large chopped onions, 3-4 chopped carrots, 6+ chopped celery stalks, 1 can tomatoes, 1 tsp to 1 tbsp crushed savory leaves, salt and pepper to taste.
  • Simmer the beans in stock with the bay leaves about 2 hours until tender. Sauté the garlic and onions, add the remaining vegetables and sauté a few minutes, then combine everything with the tomatoes, savory, salt, and pepper. Simmer 30 more minutes until thick.
