Rhubarb Spring Salsa
A bright, tangy salsa made from the very first thing ready in the spring garden — rhubarb.

Ingredients
- 1 cup finely chopped rhubarb
- 2 tbsp vinegar
- 2 tbsp olive oil
- 1 tbsp freeze-dried onion (or 2 tbsp fresh chives)
- 1 tsp sugar
- Optional: juice of a small lime
Steps
- 1Combine all the ingredients and toss to dissolve the sugar.
- 2Serve immediately, or refrigerate a couple of hours before serving.
