Carrot Ginger Cake

Made using leftover carrot pulp from juicing — a great way to use up what would otherwise be wasted.

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp allspice
  • Leftover carrot pulp from juicing
  • Eggs, oil, and sugar (standard cake wet ingredients)

Steps

  1. 1Combine the dry ingredients in a large bowl.
  2. 2Fold in the carrot pulp and the wet ingredients.
  3. 3Bake as you would a standard spice cake.
  4. 4Top with caramel apple sauce or lemon sauce.
