Fresh Rhubarb Summer Salsa
A crisp, colourful summer salsa that uses raw rhubarb the way you'd use a tangy vegetable — excellent on burgers, tacos, or straight up with chips.

Ingredients
- 4 cups+ finely diced rhubarb, packed
- 1 small red onion, finely chopped (same size as rhubarb pieces)
- 1 large green pepper, finely diced
- 1 large red pepper, finely diced
- 1 large yellow pepper, finely diced
- 3 fresh meaty tomatoes (such as Roma), finely diced
- 1 tbsp brown sugar
- 1/3 cup lime juice, or 1 tbsp powdered lime crystals
- 2 tsp coarse salt
- A few stalks garlic chives, including the bulb, chopped slightly smaller than the other vegetables
- Optional: 1 seeded and finely chopped jalapeño pepper, if you like a little heat
- Optional: 1/2–1 cup chopped fresh cilantro
- Optional: 1/4 cup chive vinegar or another flavoured vinegar
- Optional: 1 fresh nectarine, finely diced
- Optional: 2 very small garden onions, thinly sliced and diced
Steps
- 1Chop the rhubarb quite finely and measure it packed into the cup.
- 2Stir all the vegetables together in a large bowl.
- 3Sprinkle the sugar, lime juice or powder, and salt over the top, then stir until everything is evenly distributed.
- 4Use immediately, or let it sit in the fridge for a couple of hours so the flavours meld.
- 5Serve as a topping for barbecued burgers, a relish alongside grilled meat, or as a side dip with plain taco chips.
