Korean Lambs Quarters Side Dish
Serves 2–4. A savoury, sesame-rich banchan made from young wild greens.

Ingredients
- 10 oz young lambs quarters
- 3 tbsp doenjang
- 1 tbsp gochujang
- 2 cloves garlic, minced
- 1 green onion, chopped
- 1 tbsp sesame oil
- Sesame seeds, to finish
Steps
- 1Blanch the lambs quarters 1–2 minutes, then cool and drain.
- 2Squeeze the greens dry.
- 3Mix with the doenjang, gochujang, garlic, green onion, and sesame oil.
- 4Sprinkle with sesame seeds and serve as a side dish.
