Soft Rhubarb Cookies
Makes four dozen or more soft, cinnamon-warm cookies studded with rhubarb.

Ingredients
- 1 cup butter
- 2 cups brown sugar
- 2 eggs
- 1 tsp vanilla
- 3 1/2 cups flour
- 2 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 cups diced rhubarb
Steps
- 1Cream the butter with the brown sugar, then beat in the eggs and vanilla.
- 2Sift together the flour, cinnamon, salt, baking soda, and baking powder.
- 3Combine the dry mixture with the wet.
- 4Fold in the diced rhubarb.
- 5Bake at 375°F for 12–14 minutes.
